3½ dl tørrede abrikoser
1½ dl udstenede dadler, halverede
1¾ rosiner
4 store fed hvidløg, finthakkede
2 spsk finthakket ingefær
4½ dl sukker
2 dl rødvinseddike
½ tsk cayenne peber
¼ tsk salt
Kom abrikoserne i en skål og dæk dem med kogende vand. Lad dem trække i omkring en time. Hæld vandet fra og kom dem i en gryde.
Tilføj hvidløg, ingefær, sukker, vineddike, cayenne peber og salt – og lad det hele komme i kog. Skru ned for varmen og lad det simre i ca. 20 min. under jævnlig omrøring.
Tilføj de halve dadler og rosinerne – og lad det simre videre i ca. 25 min. eller til frugterne er bløde og væsken er tyktflydende. Lad det køle af og kom på skoldede glas.
