Ca. 800g fersk laks – en side eller lakseportioner
60g cashewnødder, hakkede
2 håndfulde bredbladet persille, finthakket
½ økologisk citron, saft og fintrevet skal
2 spsk olivenolie
1 spsk honning
Lidt flagesalt
Lidt friskkværnet peber
Rør olivenolie, honning og saften af ½ citron sammen.
Pensl laksen med marinaden, og drys med lidt flagesalt og friskkværnet peber.
Bland de grofthakkede cashewnødder med persillen og citronskallen og fordel blandingen
hen over laksen. Sæt den i en 200 grader varm ovn (almindelig varme).
Bag laksen i ca. 20 minutter og server den straks fx couscous eller små, nye kartofler til.
